Gefangen wird vor allem der Schwarze Degenfisch (Espada Preta), eine Tiefseefischart, die in 800 bis 1.600 Metern Tiefe vorkommt. Da er in gro\u00dfen Tiefen lebt, erfolgt der Fang haupts\u00e4chlich nachts. Die Fischer nutzen lange Langleinen, die mit zahlreichen Haken best\u00fcckt sind. Diese werden kontrolliert in die Tiefe gelassen und regelm\u00e4\u00dfig \u00fcberpr\u00fcft.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia, serif; font-size: 12pt;\">Der Degenfisch steigt aufgrund der Dunkelheit in h\u00f6here Schichten auf, was den Fang erleichtert. Madeira gilt als eines der wenigen Gebiete weltweit, in denen diese Art in gr\u00f6\u00dferer Menge vorkommt. Der Standortvorteil beruht auf den steil abfallenden K\u00fcstengew\u00e4ssern rund um die Insel.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia, serif; font-size: 12pt;\">Die Degenfischerei spielt wirtschaftlich eine zentrale Rolle f\u00fcr viele K\u00fcstengemeinden, besonders in C\u00e2mara de Lobos. Ein Teil des Fangs wird exportiert, der Rest auf lokalen M\u00e4rkten verkauft oder in der Gastronomie verarbeitet.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia, serif; font-size: 12pt;\">Das Fleisch des Schwarzen Degenfischs ist wei\u00df, zart und aufgrund seines milden Geschmacks beliebt. Typische Zubereitungen umfassen gebratenen Degenfisch mit Banane oder Maracuja-Sauce.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: Georgia, serif; font-size: 12pt;\">Die Fangmethoden gelten im Vergleich zu anderen Industriefischereien als relativ nachhaltig. Dies liegt daran, dass die Best\u00e4nde bisher nicht stark \u00fcberfischt sind und die Methode selektiv arbeitet.
